When we were in culinary school, Dennis came to class one day in an absolutely indignant frame of mind.
"This magazine is full of recipes with ridiculous instructions! Look at this one. It has four paragraphs about what to do with the tomatoes. If it'd just said 'concasse the damn tomatoes,' more people would cook it. People take one look at all those instructions and say 'no way!'"
I said, "Dennis, Dennis, Dennis. You're absolutely right. Kinda. If you'd seen a recipe that says 'concasse the tomatoes' before you came to culinary school, would you have known what that meant? Would you have cooked that recipe?"
Dennis reluctantly admitted that no, he probably wouldn't have attempted a recipe that said to concasse anything. But he thought that was a pretty sad situation, since long instructions turn so many people away from an otherwise simple and delicious recipe.
I dedicate this blog to Dennis, with the mission of taking some of the mystery and confusion out of the recipes we all cook and the foods we all eat.
